7 grams fact action dry yeast
100 grams caster sugar
300 ml warm milk
500 + 100 grams fine flour
½ teaspoon cinnamon
½ teaspoon mixed spice
2 oranges, zested
75 grams butter
175 grams mixed dried fruit
100 gram white chocolate chips
100 milk chocolate chips
2 tablespoon orange marmalade


Mix the yeast in a small bowl with 1 tablespoon sugar. Add 4 tablespoons of warm milk and set aside for 5 minutes to activate the yeast. Put the flour, 100 grams of sugar, the spices, orange zest and butter in another bowl and the rub the mixture together until it looks like bread crumbs. Add the yeast and most of the milk and make a dough that is sticky, add more milk if you feel it’s dry. Place on a dry surface and knead for about 10 minutes or until smooth and elastic. Place dough on a greased baking tray, cover with a slightly oiled cling film, and leave for 1 to 2 hours or until risen to twice its size. Then gently knead it again, sprinkle the dried fruit and chocolate chips and knead for another 5 minutes until evenly distributed. Roll into a ball, flatten and then divide the dough into equal balls. Then shape them. Place on the baking sheets at a distance, which will give them space to rise. Cover again with the cling film and leave for another hour.

Preheat the oven to 190 centigrade. Mix 100 grams of flour with 6 tablespoons of water to make a thick paste. Fill a piping bag. Then pipe a cross on each bun. Brush each bun with egg mixture. Then bake buns for 15 minutes until golden brown, and hollow-sounding when tapped on the underside. Transfer to wire rack. In a pan dissolve heat the marmalade. Brush the jam over the buns. Let them cool. Store in an airtight container.
