4 medium courgettes

50 gram plain flour

50 gram corn flour

1 egg white

oil for frying

125 ml sparkling water/plain soda


Pre heat an oven on moderate speed. Line two baking trays with butter paper. Cut the courgettes length wise into 1 cm thickness, then cut the strips into half to makes chips. Mix the flours together, then add the egg white and plain soda and whisk well. Then place in fridge to keep it cool. Fill a pan one-third with oil. Heat it. Then take out the mixture and one by one coat the couregttes with the batter and fry for 2 minutes or until golden brown. Place them on the trays and keep in the oven, with its door slightly open so that they do not become soggy. Serve with your main meat dish.
