600 grams Potatoes, peeled and chopped

25 grams butter

1/3 cup cheddar cheese

1 1/2 cup mozzarella cheese

1/3 cup tomato paste

1 egg, lightly beaten

1 medium tomato, thinly sliced

1 small onion, thinly sliced

50 grams mushrooms

2 teaspoons fresh herbs

8 slices thinly sliced meat

4 eggs (optional)


Grease a 24cm round loose based flat tin. Boil the potatoes. Then mash them adding the butter, egg and cheddar cheese until smooth. Allow to cool. Spread this mixture over base of tin, refrigerate for 30 minutes.

Then spread the tomato paste over the potato base, top with tomato slices, mushrooms, mozzarella cheese, meat, herbs and onions. You can also add four eggs on top (optional). Bake in moderately hot oven for about 30 minutes or until light golden brown.
