Ingredients:
1 cup flour
1/3 cup castor sugar
100 gram butter, melted
Filling:
1 cup (150 gram) finely chopped dried apricots
1 cup water
1/4 cup sugar
Topping:
2 eggs
1/4 cup brown sugar
1/3 cup flour
1/3 teaspoon baking powder
Method:
Grease a baking tray. Mix together the flour, butter and sugar. Then press this firmly onto the tray and bake for about 20 minutes or until light golden brown.
For filling, place the apricots in the water in a pan, bring to boil and then cook uncovered till it thickens. Then add the sugar. Let it cool.
For topping, beat the eggs and sugar together until thick and creamy. Stir in the flour.
Now first spread the filling on the base. The add the topping. bake for another 30 minutes in moderate oven, until golden brown. Let it cool. Then cut into slices and serve with cream.
