1 liter milk

250 gram cheddar cheese (cut into small pieces, you can increase the amount if you like)

2 tablespoon flour

50 gram butter

Salt, black pepper and herbs to taste


Melt the butter in heavy base pan. Then add the milk, keeping a little aside. Bring the milk to boil. Add salt, pepper, and herbs. Then make a paste of the flour with the milk. Pour this into the milk and quickly stir so that it smoothly dissolves into the milk. Cook till it begins to thicken, and then add the cheese. When the cheese has melted and the sauce is as thick as you like, remove from flame.

Other than with just pasta, this sauce is used in Lasagne, and can also be poured over cooked chicken, beef or fish to make a very nice dish as well
