40 gram butter
2-3 spring onion greens
1 clove garlic crushed
500 gram potatoes (boiled)
500 gram ricotta/cottage cheese
50 gram parmesan chees
1 egg, lightly beaten
4 teaspoons fresh or dried herbs
60 gram melted butter (extra)
8 pastry sheets
50 gram cheddar cheese (softened)
1/4 cup breadcrumbs
Heat butter in pan, add spring onion, garlic and cook until soft. In a separate bowl mix together the boiled potatoes and cottage cheese. Add the parmesan, egg and herbs. Mix well. Then add this to the pan.
Layer the pastry sheets together, brushing with the melted butter. Place the mixture in the center of the sheet. Roll over, and then close the ends. Brush over some more butter and then sprinkle the topping (just mmix the cheeses and bread crumbs well). Bake for about 25 to 30 minutes, until golden brown.
