Ingredients:
4 cups finely grated peeled potato (750 gram)
1 1/2 cup finely grated peeled sweet potato (250 gram)
1/4 cup finely chopped fresh chives
1 tablespoon finely chopped fresh oregano
2 tablespoons finely chopped fresh parsley
2 eggs, lightly beaten
1/4 cup plain flour
1 cup sour cream
Method:
Combine potato, sweet potato, all herbs, eggs and flour in a bowl. Stir using a wooden spoon until all is just combined. Heat oil in pan. Spoon heaped tablespoons of mixture into it. Cook on medium heat, giving 4 minutes to each side, or until golden brown. Serve topped with sour cream.
