Ingredients:
500 gram beef steak cut into strips
500 gram sweet potatoes cut in to 1 cm thick chips
100ml tablespoon olive oil
2 green peppers cut into thin strips
1 large onion cut into rings
250 grams cherry tomatoes
2 tablespoon soya sauce
2 tablespoons white vinegar
Seasoning of choice
Fresh coriander and mint
Method:
Preheat oven on 240 degrees. Place the sweet potato chips on a baking tray. Sprinkle seasoning and 2 tablespoons of oil. Toss to coat the chips, then bake for 25 to 30 minutes until golden and crispy.
Heat 2 tablespoons of oil. Add the peppers and onion and cook for about 10 minutes or until softened. Then take out in a bowl. Place the beef with some water. Cover and cook for about 15 to 20 minutes until tender. Then add the remaining oil in that pan, and fry the beef for about 5 minutes. Then add the tomatoes, soy sauce
